Almond shortcake

Ingredients

Quantity Ingredient
¾ cup Butter
1 cup Sugar
4 tablespoons Almond paste
1 Egg, beaten
½ teaspoon Almond extract
2 cups Flour
1 teaspoon Baking powder
½ teaspoon Salt
10 Almonds, whole, blanched

Directions

Preheat oven to 325. Cream butter, sugar and almond paste well. Add ½ of beaten egg and almond extract. Add dry ingredients and knead briefly. Lightly grease 2 8" round cake pans or pie plates. Press mixture into pans; score edges with a fork. Brush with remaining egg and arrange almonds in centre. Bake at 325 for 15 min or until lightly browned.
