Amish buttermilk biscuits

2 | tablespoons | Sugar (I used less) |
1 | teaspoon | Salt |
2 | teaspoons | Cream of tartar |
½ | cup | Cold butter in pieces |
½ | cup | Cold lard |
14 | tablespoons | Cold buttermilk |
Directions
Pulse the dry ingredients with the butter and lard until grainy, NOT blended! Add the cold buttermilk, and mix until the dough comes together.
Place dough on a floured cloth or marble slab, and knead a few times with floured hands. (Keep the dough cold!) Pat or roll out to ¾-inch thick, and cut out biscuit rounds or shapes. (You can use a cookie cutter!)
These biscuits can be frozen ahead, or baked immediately.
Baking time: Bake at 400 degrees F for 13-15 minutes if fresh, and 15-18 minutes if frozen.
