150 | grams | Anchovies; 5 oz |
2 | decilitres | Olive oil |
Peanut oil | ||
6 | Garlic cloves; peeled | |
3 | tablespoons | Vinegar |
Water; if needed |
Directions
Wash anchovies to remove salt. Place enchovies, garlic and basil in a small food processor. Process adding oil as for mayonnaise. Add vinegar and process ½ minute. If too thick add a little water. Chill Based on Barbara Kafka's " Party Foods" NOTES : Great with toasts or crudites.
