Apple cranberry muffins

Ingredients

cup All purpose flour
¼ cup Sugar
teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt
1 Egg
¾ cup Milk
¾ cup Sweetened applesauce
¼ cup Butter or margarine; melted
1 cup Fresh cranberries; coarsely chopped
2 teaspoons All purpose flour
¼ cup Sugar
½ teaspoon Ground cinnamon

Date: Thu, 21 Mar 1996 07:30:33 -0500 From: beck4@... (Eileen & Bob Holze) In medium bowl, combine 1¾ cups of flour, ¼ cup sugar, the baking powder, baking soda and salt. In small bowl, combine egg, milk, applesauce and butter, mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with 2 tb flour, fold into batter.

Spoon batter into 12 greased 2 ½ inch muffin cups.

In another small bowl, combine ¼ cup sugar and the cinnamon. Sprinkle over muffins. Bake in preheated 400 oven 20-25 mins or until wooden pick inserted in center comes out clean. Remove from pan; cool on wire rack.
