Cauliflower scallop

Ingredients

1 | cup | Coarsley chopped corn beef |
3 | tablespoons | Melted butter |
3 | tablespoons | All purpose flour |
1½ | cup | Milk |
½ | pounds | Cheddar cheese, shredded |

Salt and pepper to taste | ||
Buttered bread crumbs |
Directions
Wash cauliflower and break into flowerettes. Cook, covered, in small amount of water about 10 minutes. Drain and place in a 2 quart casserole; sprinkle with corn beef. Combine butter and flour; cook over low heat until bubbly. Gradually add milk. Cook and stir constantly until smooth and thickened. Season with salt and pepper.
Add three fourths of the cheese to sauce, stirring until melted. Pour over corn beef. Bake at 350 degrees for 10 minutes; sprinkle with remaining cheese and bread crumbs. Bake an additional 10 minutes.
