Chilled orange-cantaloupe soup

Ingredients

Quantity Ingredient
2 mediums Ripe cantaloupes peeled, seeded cut into large chunks
¼ cup Plus 2 tbs superfine sugar
¼ cup Plus 2 tbs orange juice
½ teaspoon Orange zest finely grated
2 tablespoons Slivered mint
Sugar cookies (opt) for serving

Directions

In a blender, working in batches, combine the cantaloupes, sugar, orange juice and orange zest and blend until smooth. Transfer to a large bowl and refrigerate until chilled for at least 45 minutes.

Serve in shallow bowls or large cups, garnished with the mint and accompanied with the cookies.
