Cold cucumber and mint soup dec 85

Ingredients

Quantity Ingredient
4 larges And firm cucumbers
1 cup Yogurt
1 Onion
10 larges Mint leaves
3 tablespoons Olive oil
4 Cloves garlic
1 cup Heavy cream
Sal and pepper; to taste

Directions

1. Peel the cucumbers

2. Chop onion

3. Process or put through the blender2 cucumbers, onion, mint, yogurt, garlic,salt, pepper and olive oil.

4. Transfer to a serving bowl and add cream and 2 diced cucumbers.

5. Chill
