Corn pancakes with cheese

1 Batch \"Corn Bread\" recipe
¼ cup Additional milk
slice Monterey Jack cheese
Butter or oil for frying

While corn is ours alone, we have shipped it all over the world. Everyone has discovered a special way of eating this glorious grain, and I think this one, aroPas, from South America, is an absolute winner.

Prepare Corn Fritters (see recipe) or pancakes, but make them a bit thinner than usual. Simply stir in an additional ¼ cup milk. Place sliced Jack cheese in between two cooked pancakes and refry in the pan, using a bit of additional butter or oil. Fry them on both sides until the cheese melts.

This will stop traffic at a luncheon or a party for your children. Boy, will you appear to be clever!
