Corn tomatillio salsa

Ingredients

1 cup Roasted corn kernels
2 mediums Tomatillos, husked and
Coarsely chopped
1 tablespoon Finely diced red onion
teaspoon Minced jalapeno
2 tablespoons Fresh lime juice
2 tablespoons Coarsely chopped cilantro
½ teaspoon Honey

Directions

Combine the corn, tomatillos, onion, jalapeno, lime juice, cilantro and honey in a bowl and season to taste with salt and freshly ground pepper.

Yield: about 2½ cups
