Couscous with mushrooms

Ingredients

Quantity Ingredient
3 cups Defatted chicken or
Vegetable stock
2 cups Quick-cooking couscous
3 Green onions -- thinly
Sliced
4 tablespoons Toasted pine nuts
½ cup Thinly sliced mushrooms
Minced parsley -- for
Garnish

Directions

1. In a large saucepan over medium-high heat, bring stock to a boil. Stir in couscous, onions, nuts, and mushrooms.

2. Immediately remove from heat, cover, and let stand until liquid is absorbed (5 minutes). Serve garnished with parsley.
