Crab chops

Ingredients

Quantity Ingredient
3 eaches Green onions - minced
3 tablespoons Butter or margarine
2 tablespoons Flour
1 cup Milk
1 pounds Crabmeat
20 eaches Saltine crackers - crumbled
1 each Egg - beaten
½ teaspoon Salt
¼ teaspoon Cayenne pepper
2 eaches Dashes Tabasco
Crackermeal or bread crumbs for dredging
Butter and vegetable oil for frying
Boiled crab claws for garnish (optional)

Directions

Saute onions in butter or margarine. Alternate adding flour and milk, stirring constantly to make a medium-thick white sauce. Remove from heat and add crabmeat, cracker crumbs, egg, salt and cayenne pepper.

Gently mix together and set aside to cool thoroughly. Shape into 6 patties and dredge in cracker meal or bread crumbs. Put about ½-inch of equal parts vegetable oil and butter in a skillet and fry patties on both sides until they are golden brown.
