Cranberry fruitcake

1⅓ cup Unbleached flour
½ cup Rolled oats
teaspoon Baking soda
1 teaspoon Ginger
½ cup Egg whites -- whipped
½ cup Honey
cup Orange juice -- at room
Temperature
¼ cup Applesauce -- at room
Temperature
1 teaspoon Vanilla
1 cup Cranberries -- chopped
¾ cup Apples -- shredded

Directions

Preheat oven at 350. Prepare a 9 x 13 pan with cooking spray and flour. In a mixing bowl, combine flour, oats, baking soda, and ginger. In another mixing bowl, combine egg whites, honey, orange juice, applesauce, vanilla, cranberries, and apples. Mix dry ingredients with wet ingredients just until moistened. Pour batter into prepared pan. Bake for 20 to 25 minutes, or until browned and firm to the touch.
