½ | pounds | Velveeta, sliced |
½ | pounds | Cheddar cheese, grated |
½ | teaspoon | Garlic powder (optional) |
½ | teaspoon | Cumin (optional) corn tortillas, fr |
Directions
For the meat mixture: Plop the Spam from can directly into a 12-inch frying pan, and cook on medium heat. With a fork or potato masher, break Spam into small pieces (like ground beef) and add cumin, garlic powder, minced garlic, diced chilis, red hot pepper sauce and black pepper. Cook until brown and crumbly.
Break the fried tortillas into pieces and layer half of them in the bottom of a 9-by 13-inch pan. Sprinkle with garlic powder and cumin, if desired. Spoon half of Spam mixture over tortilla layer. Arrange Velveeta slices on top. Repeat with remaining tortillas, cumin, garlic and Spam mixture. Top with grated cheddar cheese.
Bake in 359 degree oven for 30 to 40 minutes, util cheese topping is toasted.
