Eggplant-potato curry

Ingredients

Quantity Ingredient
1 medium Eggplant; seeded and diced in 1/2 inch cubes
1 Bag Simply Potatoes; (Diced with Onions flavor) if you cant find these, substitute 2 cups cooked diced potato and 1/2 cup diced onion
1 Red pepper; diced the same as the eggplant
1 Tube Gimme Lean - beef flavor
1 Jar fat free spaghetti sauce; (your favorite)
A couple of big fat cloves of garlic
1 tablespoon Curry

Directions
