* Choose foods that don't require a lot of last minute attention.
Casseroles, Stews, Soups and Baked Pastas are all good options.
* Many layer cakes such a tiramisu taste better if they are made ahead and allowed to "mellow". Remove from the refrigerator about 30 minutes before serving
* Chop ingredients up to 24 hours ahead and store in zip lock bags * Use store bought dips, dressed up with fresh ingredients and placed in interesting bowls, mugs, vases etc.
* Set your table with flair. Use many different candles at varying heights, wrap cutlery in cloth napkings, add fresh pinecones, and flowers. Fill baskets with fresh fruits and decorate with greenery and herbs from your garden. Floating candles or flower petals in a large glass bowl filled with water also makes a nice centerpiece * Make a menu, determine how long each dish will keep in the refrigerator.
Try to pick some items that you can make 4 or 5 days ahead, some 2-3 and some on the day of the event to eliminate last minute rushes.
* Review your menu about 1 week ahead of time and make sure that you have all of the ingredients you require.
* Choose your serving dishes, vases, table cloths, napkins and cutlery ahead of time, remove from storage, wash and store in a large tupperware bin out of the way. On the day of the event.. just pull it out and everything you need should be right at your finger tips.
