Focaccia and cottage cheese open sandwich

1 | 200 gram car Creamery cottage cheese | |
1 | tablespoon | Freshly grated herbs |
Salt and freshly ground black pepper | ||
1 | Round focaccia loaf; cut in half | |
; widthways and | ||
; quartered | ||
2 | tablespoons | JS fresh red pepper; (2 to 3) |

Directions
Preheat the oven 190 C, 375 F, Gas Mark 5.
Place the tomatoes on a baking sheet and drizzle with olive oil, roast for 20 minutes in the preheated oven.
Meanwhile, prepare the sandwiches. Place the Creamery cheese, fresh herbs and seasoning in a small bowl and mix with a spoon.
Divide the bottom quarters of foccacia between two plates. Spread the bread with the cheese mixture and decorate with salad leaves. Drizzle the cheese with red pepper dressing and top with remaining bread. Lay some roasted tomatoes on each plate still attached to the vine and serve.
