Fresh apple coffee cake

Ingredients

Quantity Ingredient
½ cup Butter or margarine, softened
2 cups Sugar
4 Eggs
2 cups All-purpose flour
2 teaspoons Baking powder
½ teaspoon Salt
5 cups Peeled and chopped apple (about 4 large Granny Smith or Jonathan apples)
1 teaspoon Vanilla extract
tablespoon Sugar
½ teaspoon Ground cinnamon

Directions

Beat the butter at medium speed with an electric mixer. Gradually add 2 cups of sugar; beat well. Add the eggs, one at a time, beating after each addition.

Combine the flour, baking powder and salt; add to the creamed mixture. Stir in the apple and vanilla. Spoon the batter into a greased and floured 13 x 9 x 2-inch pan.

Combine the 1½ tablespoons of sugar and the cinnamon; sprinkle over the cake batter. Bake at 350F for 45 minutes or until a wooden pick inserted into the center comes out clean. Serve warm or cold.

Makes 15 servings.
