Fresh sweet pea soup

2 | pounds | Fresh peas in the pod |
2 | cups | Onion(s), chopped |
1 | medium | Leek cleaned and chopped abt 1 1/4 cups |
Saut‚ed leeks, | ||
1 | Unpeeled carrot, chopped | |
2 | tablespoons | Olive oil |
3 | cups | Vegetable stock |
1 | teaspoon | Salt |
½ | teaspoon | Pepper celery and carrots |
Directions
GARNISH
1. Wash the pea pods, then shell the peas. Reserve the pods.
2. Saute the onions, leek, and carrot in the olive oil until they wilt, about 5 minutes. Add the pea pods and the stock. Bring to a boil, reduce the heat to low, cover,and simmer for 40 minutes.
3. Strain the stock, discard the solids, and return the liquid to the saucepan. Add the peas and simmer until they're tender, about 5 minutes. Remove the peas and pure them in a little of the stock.
Return the pure to the stock and simmer for 1 minute. Add the salt and pepper. Serve hot with a garnish of sauted leeks, celery and carrots.
