Gelatin plum pudding

Ingredients

1 | tablespoon | Unflavored gelatin |
½ | cup | Canned cherry juice |
1½ | tablespoon | Cocoa |
½ | cup | Granulated sugar |
½ | cup | Orange juice |
¾ | cup | Canned pineapple juice |
1 | cup | Seedless raisins |
½ | cup | Chopped dates |
½ | teaspoon | Vanilla extract |
¼ | cup | Chopped pecans |
Cool whip | ||
Tiny red candles |
Directions
Soak gelatin in cherry juice for 5 minutes. Mix cocoa and sugar. Add orange and pineapple juices, raisins and dates. Boil for two minutes, stirring constantly. Add the soaked gelatin aud stir until dissolved. Cool. Add vanilla and nuts. Let jell partially; stir well to mix fruit evenly. Chill until firm in round individual molds. Serve with Cool Whip on top with tiny lighted candles. Garnish with holly.
THIS MAKES A LOVELY DESSERT FOR THE HOLIDAYS.
