Ingredients

3 pounds Coarsely ground beef chuck
1 cup Chopped red chile
3 tablespoons Chile powder
½ teaspoon Oregano
1 Pepper to taste
12 ounces Tomato paste
3 Medium onions, chopped
2 Garlic cloves, minced
1 tablespoon Salt
¼ teaspoon Cumin seed
1 quart Water
32 ounces Canned kidney beans

Directions

Brown meat in large, heavy iorn skillet. Add onions, red pepper and garlic;saute until onions are limp. Stir in chile powder, salt, oregano, cumin and pepper to taste. Add water and tomato paste; simmer 1½ hour or longer. Add beans and simmer 30 minutes. Taste and adjust seasonings. When correct, cool and store at least 24 hours before serving.
