Goan creamy curry

500 | grams | Panir cheese; cubed |
200 | grams | Mushrooms |
200 | grams | Peas |
100 | grams | Spinach |
50 | millilitres | Groundnut oil |
2 | teaspoons | Garam masala |
2 | teaspoons | Ground coriander |
1 | teaspoon | Ground cumin |
100 | millilitres | Coconut milk |
100 | millilitres | Double cream |
1 | teaspoon | Salt |
2 | Fresh red chillies | |
1 | teaspoon | Turmeric |
2 | Cm root ginger; grated | |
2 | Cloves garlic; crushed | |
100 | millilitres | Water |
Directions
Shallow fry the panir. Add the salt, garam masala, coriander, cumin, turmeric, ginger, chillies and garlic and saut lightly.
Add the water and bring to the boil. Add the peas and mushrooms and simmer for 10 minutes. Add the spinach, coconut milk and cream and simmer for 5 minutes.
Serve with rice.
