cup Flour, all-purpose
1 teaspoon Baking powder
¼ teaspoon Salt
1⅔ cup Milk, evaporate; undiluted
½ teaspoon Salt
2 teaspoons Mustard, dry
2 Eggs; well beaten
1⅔ cup Milk, evaporated; undiluted
pounds Shrimp; shelled and deveined
2 cups Cheese, American process; shredded

Directions

3-MINUTE CHEESE SAUCE

Sift together flour, baking powder, and salt. Add eggs and evaporated milk. Blend. Dip shrimp in batter and cook in hot shortening (375 degrees) for 8 to 10 minutes or until lightly browned. Drain on absorbent paper. Serve with 3-Minute Cheese Sauce.

3-Minute Cheese Sauce: Simmer evaporated milk, salt, and mustard in saucepan over medium heat to just below boiling (about 2 minutes). Add cheese; stir over medium heat until cheese melts (about 1 minute longer). Yield: 2-½ cups.
