Greek walnut cake (karidopita)

1 cup Sugar
3 cups Ground walnuts
½ cup Bread crumbs
teaspoon Grated lemon rind
1 tablespoon Grated orange rind
3 tablespoons Brandy or cognac
¼ cup Orange juice
1 teaspoon Cinnamon
½ teaspoon Cloves
2 teaspoons Baking powder
9 Egg whites

submitted by: sgjg6566@... (Julie, Michigan, USA) Hi everyone!! I finally found this recipe that I'd been searching for and I wanted to share it with everyone--it's so good! It came from a Greek friend of the family.

Beat yolks with sugar until light and smooth. Mix the walnuts with the bread crumbs, grated lemon and orange rinds. Add to egg mixture; stir in the brandy (or cognac) and the orange juice. Add the spices and the baking powder. Beat the egg whites until stiff but not dry, folding into nut mixture gently and carefully to evenly distribute the egg whites. Bake in greased 12x9" pan at 350 degrees for 30 minutes. Serve plain or with whipped cream on top and sides. DAVE <DAVIDG@...>
