Grilled halibut and vegetables

Ingredients

Quantity Ingredient
½ cup Olive oil
¼ cup Lemon juice
2 tablespoons Chopped chives or minced shallots
1 tablespoon Dijon mustard
1 Minced clove garlic
½ teaspoon Salt
12 smalls New potatoes partially cooked
2 mediums Summer squash halved and sliced vertically within 1/2 inch of top
2 Yellow/green peppers halved seeded and sliced in vertical strips
1 large Onion cut into 1/2 to 3/4 inch thick slices
4 Halibut; (6-oz each) steaks or other fish steaks

Directions

From: HallieByrd <HallieByrd@...> Combine oil, lemon juice, chives, mustard, garlic and salt in small mixing bowl; blend well. Arrange vegetables on grill about 5 minutes before fish; baste frquently. Arraneg fish on grill; cook 5 minutes per side or about 10 minutes per inch of thickness, basting frequently.
