Grilled lamb cubes, greek style

Olive oil | ||
Garlic | ||
Oregano | ||
Fresh lemon juice | ||
Salt; to taste | ||
Freshly-ground black pepper; to taste |
Directions
Lamb cubes about 1-inch square are marinated in olive oil, garlic, oregano and fresh lemon juice for about 3 hours. The meat cubes are then put on sticks and grilled over charcoal fires. Your barbecue will do well. Add a bit of salt and pepper before serving. Do not overcook the meat. This can be avoided by not creating a flame that is too hot. Just cut down a bit on the number of charcoal briquets you use.
Comments: This is a simple dish that one sees in the villages outside Athens and on the islands. It is easy to prepare and the flavors will be very close to what you would find in beautiful Greece.
