Homemade quick mix

Ingredients

4 | tablespoons | Baking powder |
1 | tablespoon | Salt |
2 | teaspoons | Cream of tartar |
1 | teaspoon | Baking soda |
1½ | cup | Nonfat dry milk -- instant |
OR | ||
1½ | cup | Dry buttermilk powder |
2¼ | cup | Vegetable shortening |
Directions
In a large bowl, sift together all dry ingredients. Blend well. Cut in shortening by hand or with a heavy-duty mixer until the mixture resembles cornmeal in texture. Put into an airtight container; label with date and contents. Store in a cool, dry pl Makes about 13 c of Homemade Quick Mix.
Variation: Use 4¼ c unbleached flour and 4 ¼ c whole wheat flour.
