Hoppin' sam with ham

Ingredients

Quantity Ingredient
2 cups Brown rice (not instant)
4 cups Water
1 each Large onion, chopped
6 eaches Stalks, celery, chopped
2 eaches 14 1/2 oz can stewed or
Seasoned tomatoes
2 tablespoons Butter or margarine
1 tablespoon Italian seasoning
2 teaspoons Sugar
1 pounds Cubed ham
4 eaches 16 oz cans black-eyed peas,
Drained

Directions

Cook onion and celery in butter until tender. Add rice and water, bring to boil, reduce heat and simmer (covered) for 45 minutes. Add remaining ingredients and cook in slow oven (225F) for 1-2 hours.

Enjoy with cornbread for good luck as your first meal on New Year's Day!!
