Hot pepper popovers

Ingredients

Quantity Ingredient
4 Eggs
2 cups Milk
2 cups All purpose flour
¾ teaspoon Salt
¼ cup Diced pickled jalapeno peppers

Directions

Pickled hot peppers add extra zest to easy to make popovers. If you know your guests like their hot foods really hot, increase the jalapeno peppers to ½ cup.

In large bowl, beat eggs with milk. Stir in flour and salt just until blended. Batter will be lumpy. Stir in peppers. Fill 24 well-greased muffin cups three quarters full. Place in cold oven.

Set oven at 450F and bake for 30 minutes. With skewer, puncture each popover and bake for 10 minutes longer or until popovers are golden brown, crips and well puffed. Makes 24 popovers.
