Jiffy nutmeg cake -- a one-bowl cake

2 cups All-Purpose Flour -- sifted
cup Sugar
1 teaspoon Salt
2 teaspoons Baking Powder
cup Heavy Cream
3 Eggs
2 teaspoons Nutmeg -- grated
2 tablespoons Dark Rum Or Brandy

Directions

Preheat oven to 350 F. Sift flour, sugar, salt, and baking powder into a mixing bowl. Add cream, eggs, and nutmeg, and beat for 3 mins.

Add rum or brandy and beat for 1 min longer. Then pour into a greased and floured 9 x 5 x 3-inch loaf pan and bake for 1 hour, or until a toothpick inserted in center comes out clean. Cool on cake racks and frost or enjoy plain.

Yield: 10 servings.
