2 Lamb shanks
Olive oil
2 Cloves minced garlic
1 can (16 oz) of diced tomatoes
2 Potatoes
1 can Chick peas (gabanzo beans)

Directions

This is my own recipe for lamb shanks. My family loves it.

Brown the lamb shanks in a little olive oil. Add 2 cloves minced garlic.

For 2 shanks, add a 16 oz. can of diced tomatoes. Cover and simmer about 2 hours. Peel and slice potatoes, (1 for each shank). Add to pan. Cover and cook about 18 minutes. When potatoes are tender, add a can of chick peas (gabanzo beans) to the pan. Season and heat through.
