Lemon cream scones

Ingredients

1 | Lemon ; rind of | |
2 | cups | Flour |
¼ | cup | Sugar |
2 | teaspoons | Baking powder |
⅓ | cup | Butter |
½ | cup | Heavy cream |
1 | Egg | |
1½ | teaspoon | Vanilla |
Directions
Stir together flour, sugar, baking powder and rind.
Cut in butter until resembles coarse crumbs. In small bowl, mix cream, eggs, and vanilla.
Add to flour mixture. Knead the dough (it will be sticky).
Pat dough into ½ inch thickness. Cut with small round glass. Place on cookie sheet sprayed with a non-stick spray.
Bake in a 400°F oven for 10-15 minutes.
NOTE: I think ½ inch is too thin. Next time I make them, I'll use a glass and make them at least 1-½ inches thick. ALSO, I added ½ teaspoon lemon flavoring (real, not imitation!) Posted to TNT - Prodigy's Recipe Exchange Newsletter by Melissa Tarleton <mhtarlet@...> on Dec 06, 1997
