Lentils with rice (moujadara)

Ingredients

1½ | cup | Lentils drained) |
8 | cups | Water |
1½ | teaspoon | Salt |
¼ | teaspoon | Pepper |
½ | cup | Rice (washed and drained) |
½ | cup | Vegetable oil |
1 | medium | Onion (julienned) |
Directions
Instructions:
1. Wash lentils, drain and place in saucepan. Cover and cook for 1 hour or until lentils are tender.
2. Add salt and pepper to the lentils. Cook at a steady boil on low heat for 25 minutes, stirring occasionally.
3. Saute onions in oil until onions are a golden brown. Add to cooking lentil mixture, stir and remove from heat.
Serve hot or cold with cold yogurt, a salad, pickles and a squeeze of lemon over each individual serving.
