Mackerel mediterranean

Ingredients

Quantity Ingredient
4 Mackerel (about 1 1/2 lbs.
Each), filleted, unskinned
2 mediums Onions, sliced thin
3 cups Tomatoes (fresh or canned),
Chopped-coarsely and drained
½ teaspoon Coriander, ground
½ teaspoon Fennel, ground
½ teaspoon Basil
½ teaspoon Oregano
1 Clove garlic, minced
½ teaspoon Salt
Pepper to taste
tablespoon Olive oil

Directions

1. Preheat oven to 350F. Wash mackerel. In casserole or baking pan, layer mackerel fillets, skin-side up, with onions in between. 2.

Combine remaining ingredients. Pour over mackerel. 3. Bake, uncovered, in preheated oven for 45 minutes to an hour, until onions are cooked and fish is tender. Serve 6-8 *From The Rodale Cookbook* Submitted By MICHELLE BRUCE On 01-31-95
