Olive oil to cover | ||
4 | ounces | Black olives |
¼ | Red bell pepper, cut into | |
Strips | ||
1 | Fresh red chile, cored | |
Seeded and cut into rings | ||
Sprig of Thyme |
Directions
Put green olives in a preserving jar or screwtop jar. Add lemon slices. Add coriander, mint and half of garlic to jar. Cover with olive oil and seal jar.
Put black olives in another jar. Add red bell pepper, chile, thyme and remaining garlic.
Cover with olive oil and seal jar. Leave to marinate at least 2 days before serving.
Yield: 6 servings
