Mashed potato doughnuts
4 Servings
Ingredients
Quantity | Ingredient | |
---|---|---|
2 | tablespoons | Crisco shortening; melted |
1 | Egg | |
½ | cup | Milk |
2¾ | cup | Flour |
2½ | teaspoon | Baking powder |
1 | teaspoon | Salt |
1 | cup | Sugar |
1 | cup | Mashed potatoes |
Directions
Blend Crisco, egg and milk. Mix flour, baking powder, salt and sugar.
Combine two mixtures with mashed potatoes and mix thoroughly. Roll on lightly floured pastry cloth or board and cut with floured doughnut cutter.
Fry in deep Crisco heated to 365 degrees (or when a one inch cube of bread browns in 60 seconds) 3-5 minutes. Drain on absorbent paper. Dip in powdered sugar.
These do not keep well. Serve within 24 hours for best flavor.
