Meatless lasagna

Ingredients

Quantity Ingredient
1 medium Onion, chopped
1 Clove garlic, minced
1 Jar (24 oz) pasta sauce or your favorite homemade sauce
½ Box (16 oz) lasagna pasta
1 Egg
1 tablespoon Parsley flakes
3 cups Ricotta cheese, shredded
¼ pounds Fresh spinach, chopped
Soy sauce
1 cup Sharp cheddar cheese, shredded
1 cup Parmesan cheese, grated

Directions

1. In a pan, saute the onion and garlic. Stir in the pasta sauce.

2. In pot, cook 9 lasagna noodles according to the package directions and rinse in cold water.

3. In a large bowl, blend the egg, parsley flakes, and Ricotta cheese.

4. In a 13- x 9-inch baking pan, place 3 of the lasagna noodles, 1/3rd

of the pasta sauce mixture over the noodles, and 1/3rd of the spinach over the sauce. Sprinkle with soy sauce (Ha, the secret ingredient!). Repeat the layers two more times. Finish with the cheese and sprinkle with the grated parmesan cheese.

5. Bake the lasagna in a preheated, 375 degree F. oven for 50 minutes or until bubbly.

VARIATIONS:

MEAT: Cook 2 pounds of Italian sausage in step 1, drain. Add the sauteed onion and garlic and the pasta sauce.

LOWER FAT MEAT: Marinade 1 pound ground turkey in 2 cups of soy sauce, cook in step 1, drain. Add the sauteed onion and garlic and the pasta sauce.

Makes 12 herbivores or 4 guys servings.
