Ingredients

Quantity Ingredient
½ cup Fructose
2 tablespoons Canola oil
½ cup Fat-free yogurt; plain
1 Egg white
¼ cup Orange juice
2 cups Flour
teaspoon Baking powder
teaspoon Salt
½ teaspoon Nutmeg
½ cup Mango; chopped
¼ cup Dried apricots
¼ cup Toasted almonds; chopped
1 starch/bread exchange

Directions

Mix all ingredients. Pour batter into sprayed muffin tins. Bake at 350 degrees for 10-15 minutes.
