Muesli pancakes

Ingredients

60 | grams | Medium oatflakes |
1 | large | Egg; beaten |
150 | millilitres | Milk |
1 | pinch | Salt |
2 | teaspoons | Baking powder |
6 | Pieces apricot; dried | |
2 | Pieces pear; dried | |
2 | tablespoons | Raisins |
1 | tablespoon | Nuts; chopped |
1 | Apple; grated | |
Butter for greasing | ||
Icing sugar |
Directions
Mix all the ingredients together and let the mixture rest for approximately 30-60 minutes for the oatflakes to swell.
Heat a frying pan or griddle and grease with a little butter. Drop the batter in by the dessert spoonful, about 3 at a time. Cook slowly until the edge starts to set, approximately 3 minutes, then turn over and cook the other side until lightly browned. Keep warm.
Repeat until the mixture is finished.
Serve immediately with a dusting of icing sugar.
