Natillas piuranas (caramelized milk pudding) (peru)

8 servings

Ingredients

Quantity Ingredient
15 ounces Condensed milk; canned
3 cups Milk, fresh
½ teaspoon Baking soda
1 cup Dark brown sugar
¼ cup Water

Directions

In a small saucepan, bring the condensed milk, fresh milk and soda just to the boil over high heat, stirring constantly. Immediately remove pan from the heat. Combine the sugar and water in a heavy 4 to 5 quart saucepan and cook them over low heat, stirring constantly, until the sugar dissolves. Pour in the hot milk and stir well. Cook over very low heat for 1 hour and 15 minutes, stirring occasionally, watching carefully for any sign of burning and regulating the heat accordingly. The mixture will become a thick amber-colored pudding.

Serve the pudding at room temperature, or refrigerate it and serve it chilled.
