Oatmeal raisin pancakes

Ingredients

cup Rolled oats
½ cup Wheat flour
1 tablespoon Baking powder
2 tablespoons Cinnamon
1 teaspoon Nutmeg
1 Egg white; whipped
½ cup Bananas; mashed
1 tablespoon Applesauce
cup Skim milk; at room temperatu
½ cup Raisins

Recipe by: Anita A. Matejka Preparation Time: 0:15 Prepare skillet with cooking spray and heat on medium until hot. In a mixing bowl, combine oatmeal, flour, baking powder, cinnamon, and nutmeg. In another mixing bowl, combine egg white, banana, applesauce, and milk.

Mix dry ingredients with wet ingredients just until moistened .

Ladle in the batter, using 2 or more tablespoons per cake. Cook for 2 minutes, then flip carefully and cook for 2 minutes more. Repeat with remaining batter.
