Orange couscous

1¾ | Orange juice | |
1 | cup | Uncooked couscous |
⅓ | cup | Chopped dried apricots or dried pineapple |
¼ | cup | Raisins or cranraisins |
1 | teaspoon | Ground cinnamon |
⅛ | teaspoon | Ground ginger |
1 | tablespoon | Honey |
½ | cup | Water |
Directions
Bring 1½ cups orange juice to a boil in a small saucepan.Stir in couscous and remove from heat, cover, and allow to stand for 5 minutes.
Heat remaining ¼ cup orange juice in another saucepan. Add apricots ( or pineapple ), raisins, honey and cinnamon and ginger and saute for 2 or 3 minutes. combine couscous and fruit mixture and spoon into serving bowls if serving at once. Makes 3 servings. You can also pack the mixture into a 3 serving size container and refridgerate. Upon chilling it will turn into the consistency of a packed bread pudding. YUM !
