Orange honey-baked chicken

Ingredients

¼ cup Frozen orange juice concentrate
1 tablespoon Lemon juice
3 tablespoons Honey, divided
½ teaspoon Finely grated orange peel
½ teaspoon Dry ginger
4 Skinless, boneless chicken breasts (ahout 1 lb)
2 tablespoons Sweetened orange marmalade
Orange slices for garnish

Directions

Preheat oven to 400 degrees. In a glass baking dish (8"x8") mix together the orange juice concentrate, the lemon juice, 2 tablespoons of the honey, the orange peel and the ginger. Add the chicken and turn it over to coat it with the juice mixture. Let the chicken marinate for 10 minutes.

Bake the chikcen uncovered at 400F for 10 minutes, then beast it with the juices in the dish. While the chicken is baking for another 10 minutes, mix the remaining tablespoon of honey with the orange marmalade to make a glaze. Baste the chicken a second time and top it with the glaze. Bake 8 more minutes or until chicken centers are no longer pink.

Transfer chicken to a serving plate and pour juices from the glass dish over the chicken. Garnish with orange slices.
