Pappardelle with olive paste and gruyere

225 | grams | Dried pappardelle (or other flat noodles) |
1 | tablespoon | Olive oil |
4 | tablespoons | Black olive paste |
1 | tablespoon | Pine nuts |
75 | grams | Gruyere or Swiss cheese, grated on the fine side of the grater |
Directions
Preheat oven to 200 C/400 F/Gas 6.
Cook the pasta for 6 min in boiling salted water. Drain. Pour the oil into a medium gratin dish and add the drained noodles. Toss the noodles in the olive oil and the olive paste. Cover with pine nuts and the grated cheese.
Bake for 15-20 min until the cheese has turned crispy and golden. The pasta on top is slightly crisp as well, underneath it is moist and fragrant.
