Pina colada muffins^

Ingredients

½ | cup | Crushed pineapple, |

3½ | tablespoon | Pineapple juice concentrate |
2 | Egg whites, lightly beaten | |
½ | teaspoon | Coconut extract |
½ | cup | Flour |
½ | teaspoon | Baking soda |
Directions
Preheat oven to 375F. Spray 6 muffin cups with pam and set aside.
Combine wet ingredients. Combine flour and baking soda. Mix the two mixtures together, spoon into muffin cups and bake until golden brown and a toothpick inserted in center comes out clean, about 25 minutes.
