Pizella-small eggplant pizza

Ingredients

1 Eggplant
Dried oregeno
Mozzarella cheese
1 cup Thick tomato pasta
Sliced thin
Sauce with spices
Salt
Grated parmesan chese
Dried Basil

Directions

Cut the eggplant crosswise into ⅜" slices. Then cut each slice into quarters. Salt lightly on each side and set on paper towels for 20 minutes.Then pat dry pieces and arrange them on a PAMed cookie sheet.

Brush lightly with olive oil and sprinkle pieces Serve immediately.
