2 | tablespoons | Onion, chopped |
1 | tablespoon | Garlic, chopped |
5 | cups | Cooked long-grain rice |
1 | tablespoon | Cilantro leaves, chopped |
1 | cup | Cucumber, sliced |
2 | tablespoons | Red & green chilies, chopped |
1 | cup | Tofu, diced |
3 | tablespoons | Soy sauce |
½ | teaspoon | White pepper |
3 | eaches | Green onions, chopped |
1 | each | Lime, cut into wedges |
Directions
GARNISH
Heat the oil in a wok over medium-high heat. Add the onion & stir-fry for 3 minutes. Add the garlic & stir-fry until both are golden. Add the rice & the tofu & stir-fry for 3 minutes. Sprinkle with soy sauce & white pepper. Remove from heat & place in a serving dish surrounded with garnishes. Adapted from Puangkram C. Schmitz & Michael J. Worman, "Practical Thai Cooking"
