Pork stew with cornmeal dumplings

1 lb boneless pork shoulder roast 1 clove garlic, minced 1 TB cooking oil 4 md carrots, cut into ½-inch pieces (2 cups) 2 md potatoes, peeled and cubed (2 cups) 12 oz can (1½ cups) beer ¼ c quick cooking tapioca 1 TB sugar 1 TB Worcestershire sauce 2 bay leaves 1 ts dried thyme, crushed ½ ts salt ¼ ts ground nutmeg ¼ ts pepper 28 oz can tomatoes, cut up Cornmeal dumplings (recipe follows) 2 TB shredded cheddar cheese

Cut pork into 1-inch cubes. In a large skillet brown pork and garlic in hot oil. Drain well

Meanwhile, in a 3 ½ or 4 quart crockery cooker combine carrots, potatoes, beer, tapioca, sugar, Worcestershire sauce, bay leaves, thyme, salt, nutmeg and pepper. Stir in browned meat and undrained tomatoes. Cover; cook on low heat setting for 9-11 hours or on high heat setting for 4-5 hours.

If stew was cooked on low heat setting, turn crockery cooker to high heat setting. Prepare Cornmeal Dumplings. Remove bay leaves. Stir stew; drop dumplings by tablespoonfuls onto stew. Cover; cook for 50 minutes more (do not lift cover). Sprinkle dumplings with cheese.

Makes 4 servings.

For 5 or 6 quart crockery cooker: Use one 1 ½ pound boneless pork shoulder roast, 5 medium carrots, and 3 medium potatoes. Leave remaining ingredient amounts the same. Prepare as above. Makes 6 servings.

For 1 quart crockery cooker: Use 1 medium carrot, halve remaining stew ingredients, and omit Cornmeal Dumplings and cheese. Prepare as above. Cook for 10-12 hours. Serve stew with corn muffins or corn bread. Makes 2 servings.

½ c all-purpose flour ½ c shredded cheddar cheese ⅓ c yellow cornmeal 1 ts baking powder ds pepper 1 beaten egg 2 TB milk 2 TB cooking oil

In a medium mixing bowl stir together flour, cheddar cheese, cornmeal, baking powder, and pepper.

Combine beaten egg, milk, and oil. Add to flour mixture; stir with a fork just till combined. Use in Pork Stew with Cornmeal Dumplings, above.
