Potato-vegetable casserole

Ingredients

Quantity Ingredient
8 ounces Muenster cheese, shredded
cup Plain low-fat yogurt
2 teaspoons Dijon style mustard
teaspoon Black pepper
12 ounces Peeled, boiled potatoes, thinly sliced
2 cups Each: cooked cauliflower and thinly sliced carrots
½ cup Chopped scallions or green onion

Directions

In small bowl combine first 4 ingredients. In shallow 4 quart flameproof casserole arrange potatoes, cauliflower and carrots; sprinkle with scallions and top with yogurt mixture.
