Potatoes with green onions (aloo pyaz ka sabzi)

1 | tablespoon | Lemon juice |
Directions
Heat the oil in a large non-stick skillet over moderate heat. Add the cumin seeds and stir until darkened, about 2 seconds. Add the tumeric and cook for 2 to 3 seconds. Add the potatoes and toss to coat with the spices and oil. Add 2 tbsp water. Cover and reduce the heat to low. Cook for 10 minutes. Add the green onions, salt to taste, red pepper powder and coriander to the pan. Stir to mix thoroughly. Add more water if necessary to prevent the potatoes from sticking to the pan and burning. Cover, increase the heat to medium.
Continue cooking, stirring occasionally, until the potatoes are cooked, about 5 to 6 minutes. If any liquid remains in the pan, uncover and stir until the potatoes are dry. Add the lemon juice and serve. 130 calories and 4 grams fat.
