Pumpkin whoopie pies (these are the best!)

Ingredients

2 | cups | Brown sugar |
1 | cup | Veg. oil |
1½ | cup | Cooked, mashed pumpkin (not the canned stuff, too runny.) |
2 | Eggs | |
3 | cups | Flour |
1 | teaspoon | Salt |
1 | teaspoon | Baking powder |
1 | teaspoon | Baking soda |
1 | teaspoon | Vanilla |
1½ | tablespoon | Cinnamon |
½ | tablespoon | Ginger |
½ | tablespoon | Ground cloves |
Directions
1. Cream sugar and oil. 2. Add pumpkin and eggs. Add flour, salt, baking powder, soda, vanilla, and spices. Mix well. 3. Drop by heaping teaspoons onto greased cookie sheet. Bake at 350 degrees for 10-12 mins.
Variation: Add ½ cup ground Black Walnuts for a great additional flavor.
